After long Sunday morning hikes, my husband and I love a healthy, satisfying breakfast that is packed with good carbs and protein. This warm and nutty breakfast couscous is a staple for us. It's chock-full of protein-rich seeds and nuts and is sweetened with ground cinnamon and pure maple syrup. Pepitas are flat, green Mexican pumpkin seeds found at Mexican markets, health food stores, and some major supermarkets. Unsalted pumpkin or sunflower seeds make good substitutes. —Food Blogga

Ingredients
  • 1/2 cup dry couscous
  • 1/2 cup chopped mixed unsalted nuts, equal parts almond, pecans, pistachios, and walnuts
  • 2 tablespoons unsalted pepitas or sunflower seeds
  • 2 to 3 pinches cinnamon
  • 3 tablespoons pure maple syrup, plus extra for serving
Directions
  1. In a small pan, bring 1 cup of water to a boil. Add couscous. Remove from heat for 5 minutes. Add remaining ingredients and stir well. Drizzle each serving with a little extra maple syrup, if desired.

So excited to try this recipe -- we always have an unusually large stockpile of couscous and pepitas in the pantry so this will be a good thing to add to the rotation!

I've never tried a sweet couscous preparation, not sure why. I'm a big fan of steel cut oatmeal for breakfast, but this sounds so good that I'll have to sub it into the rotation sometime soon. Love your photo too.

It's cold or cool in the morning where I live, most of the year, so I eat a lot of hot cereal (usually oatmeal). I love this recipe, especially the inclusion of the pepitas. I added a few raisins, just for fun and a pinch of allspice and it was so good. This one is definitely a keeper!

I'm so happy you enjoyed it! I love oatmeal too, but this couscous is a nice change. Plus it's versatile, as you discovered. I'll have to try allspice now too.
