Cleaning out the freezer. I was hungry, cold and tired. Half hour soup. VOILA!
bag frozen artichoke
homemade chicken stock
cloves of garlic
stalks of celery
brown onions, then celery, then the rest in a heavy pot in a bit of olive oil.
add chicken stock.
bring to simmer for 15 minutes
use immersion blender to puree.
add water as needed.
salt, pepper and finish with a bit of truffle oil.
