Author Notes: Cleaning out the freezer. I was hungry, cold and tired. Half hour soup. VOILA!
- 1 bag frozen artichoke
- 2 cups homemade chicken stock
- 1 large onion
- 3 large cloves of garlic
- 3 stalks of celery
- 2 T chopped parsely
- 1 T truffle oil
- brown onions, then celery, then the rest in a heavy pot in a bit of olive oil. add chicken stock. bring to simmer for 15 minutes
- use immersion blender to puree. add water as needed. salt, pepper and finish with a bit of truffle oil.
