Egg Scramble with Zucchini and Goat Cheese

I believe that the best way to start your day is by eating a delicious breakfast. Egg Scrambles are simple and delicious, and can be made with pretty much anything you fancy. —bexwithanx6

What You'll Need
Ingredients
  • 4 eggs, beaten
  • 1 zucchini, diced
  • 2 ounces goat cheese
  • 3 cloves garlic, minced
  • 2 tomatoes, seeds removed and diced
  • Olive oil
  • Salt
  • Pepper
Directions
  1. Heat oil in a sauté pan. Add zucchini and cook until tender and slightly browned. Add garlic and cook for just a few minutes (do not let the garlic brown). Add the tomato, then pour the eggs into the pan. Season with salt and pepper, and cook stirring occasionally until eggs are cooked but still soft. Fold in the goat cheese. Serve with toast.
