We came up with a tasty variation on the ubiquitous shrimp cocktail. Instead of serving it on lettuce or some other green, or in a Margarita glass, or whatever, we placed the shrimp on avocado halves. It is delicious and a little more filling than the usual shrimp cocktail and would satisfy some people as a lunch. Use the usual cocktail shrimp with whatever cocktail sauce you like and enjoy. Garnish with parsley and serve with a lemon wedge.One avocado serves two. —Tom and Anita Morgan

What You'll Need
Ingredients
  • 1/2 pound cooked baby shrimp
  • 1 jar cocktail sauce
  • 2 avocados
  • Italian parsley
Directions
  1. Select an attractive serving dish then place 1/2 of the avocado on the plate (you can leave the skin on or off, whatever you prefer).
  2. Place the shrimp in the avocado half then add the cocktail sauce and garnish with the Italian parsley. This appetizer is so easy and looks so creative and colorful.
