We came up with a tasty variation on the ubiquitous shrimp cocktail. Instead of serving it on lettuce or some other green, or in a Margarita glass, or whatever, we placed the shrimp on avocado halves. It is delicious and a little more filling than the usual shrimp cocktail and would satisfy some people as a lunch. Use the usual cocktail shrimp with whatever cocktail sauce you like and enjoy. Garnish with parsley and serve with a lemon wedge.One avocado serves two. —Tom and Anita Morgan

Select an attractive serving dish then place 1/2 of the avocado on the plate (you can leave the skin on or off, whatever you prefer).
