Author Notes: We came up with a tasty variation on the ubiquitous shrimp cocktail. Instead of serving it on lettuce or some other green, or in a Margarita glass, or whatever, we placed the shrimp on avocado halves. It is delicious and a little more filling than the usual shrimp cocktail and would satisfy some people as a lunch. Use the usual cocktail shrimp with whatever cocktail sauce you like and enjoy. Garnish with parsley and serve with a lemon wedge. One avocado serves two. —Tom and Anita Morgan
- 1/2 pound cooked baby shrimp
- 1 jar cocktail sauce
- 2 avocados
- Italian parsley
- Select an attractive serving dish then place 1/2 of the avocado on the plate (you can leave the skin on or off, whatever you prefer).
- Place the shrimp in the avocado half then add the cocktail sauce and garnish with the Italian parsley. This appetizer is so easy and looks so creative and colorful.
