I saw a gorgeous pic on Pinterest called, Red Beet Hummus, that was a vibrant and rich red that only a beet can have. I didn't bother to read the recipe because I figured that one just added beets to a basic hummus recipe. I was wrong. My red beet hummus was pink. Turns out, it was a delicious error. This is the fast way to make a hummus. Roasting your own beets and cooking dried chick peas would definitely be tastier but if you are in a rush, this will do nicely.
