Author Notes: I saw a gorgeous pic on Pinterest called, Red Beet Hummus, that was a vibrant and rich red that only a beet can have. I didn't bother to read the recipe because I figured that one just added beets to a basic hummus recipe. I was wrong. My red beet hummus was pink. Turns out, it was a delicious error. This is the fast way to make a hummus. Roasting your own beets and cooking dried chick peas would definitely be tastier but if you are in a rush, this will do nicely. In case you are looking for a recipe without chick peas, this one looks fab: http://food52.com/blog... —DjeenDjeen
Makes: 2 cup+
Canned chick peas
Cooked beets (around 8 oz. I used packaged, cooked beets from Trader Joe's)
Garlic cloves, peeled
Lemon, juiced and strained
cup Olive oil
Pepper to taste
- Drain chick peas and place in blender. Add remaining ingredients and process until smooth. Taste. Might need more salt or lemon juice, depending on how you like your hummus.
- Put in a dish and drizzle a little olive oil on top. Done!
