Author Notes: I saw a gorgeous pic on Pinterest called, Red Beet Hummus, that was a vibrant and rich red that only a beet can have. I didn't bother to read the recipe because I figured that one just added beets to a basic hummus recipe. I was wrong. My red beet hummus was pink. Turns out, it was a delicious error. This is the fast way to make a hummus. Roasting your own beets and cooking dried chick peas would definitely be tastier but if you are in a rush, this will do nicely. Makes 2 cup+
- 15 oz. Canned chick peas
- 4 Cooked beets (around 8 oz. I used packaged, cooked beets from Trader Joe's)
- 2 Garlic cloves, peeled
- 1/4-1/2 cups Tahini
- 1 Lemon, juiced and strained
- 1/4 cup Olive oil
- 2 teaspoons Salt
- Pepper to taste
- Drain chick peas and place in blender. Add remaining ingredients and process until smooth. Taste. Might need more salt or lemon juice, depending on how you like your hummus.
- Put in a dish and drizzle a little olive oil on top. Done!
