My friend Sharon gave me this recipe years ago, and I still have the tattered piece of paper with "this is seriously good!" written in her original handwriting. This recipe is so simple, and straight from the pantry. Even if you get interpretive with the ratio of ingredients, it still tastes delicious and honestly, there is something so satisfying about 'cooking' a raw meal with your own two hands. —Sasha
Ingredients

Olive oil

2-3 tablespoons
Tamari (or soy sauce alternative like Liquid Aminos)

2 teaspoons
Mirin

2 teaspoons
Sesame Oil

4 teaspoons
Rice Vinegar

Large kale leaves
Directions

In a large bowl, tear up kale leaves to bite size pieces. Add the liquid ingredients. If you mis-measure any of them, it will still taste magnificent.

Roll up your sleeves and use your hands to massage the mixture. The leaves will get a brilliant emerald sheen, and begin to soften and break down. Plate your salad, wash your hands, and dig in!
