Bloody Mary Crab Bisque

Serves 2 - 4

  • 1 tablespoon Olive Oil
  • 4 Anchovies
  • 2 Bacon
  • 1 Onion, pureed or finely diced
  • 1 Celery, pureed or finely diced
  • 3 tablespoons Pickled Red Jalapeno, chopped (plus whole as garnish)
  • A few sprigs Thyme
  • 1/2 Lemon, zested
  • 20 grams Flour
  • 20 grams Butter
  • splashes Vodka
  • 1 tablespoon Tomato Puree
  • 2 teaspoons Worchester Sauce
  • 1 tablespoon Sherry Vinegar
  • 1/2 Lemon, juiced
  • 500 milliliters Passata
  • 250 milliliters Fish Stock
  • 2 tablespoons Double Cream
  • 2 handfuls Crab Meat
  • 1 teaspoon Fresh Cracked Black Pepper
  • Celery peels (for garnish)
  • Chives (for garnish)
  • Whole Pickled Red Jalapeno (for garnish)
  • Lemon Wedges (to serve)
  • Parmesan Shortbreads or Crusty Bread (to serve)
