Mixed Green Salad with Homemade Dijon Balsamic Dressing

This salad is the perfect mix of both fresh and hearty ingredients & is filling enough to enjoy as an entree. —Rachel {le forque}

What You'll Need
Ingredients
  • Dijon Balsamic Dressing
  • 5 teaspoons dijon mustard
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon salt
  • Mixed Green Salad
  • 4 cups mixed greens
  • 1/4 cup steamed lentils
  • 2 pieces steamed beets
  • 1 handful mini heirloom tomatoes
  • 1 teaspoon chia seeds
  • 1 pinch fresh shaved parmesan cheese
  • 1/2 piece avocado
Directions
  1. Place all of the Dijon Balsamic Dressing ingredients into a small bowl and whisk until a nice emulsion forms -place to the side
  2. Cut beets, mini heirloom tomatoes, & avocado into desired bite-sized pieces
  3. Place mixed greens in a large bowl & top with lentils, beets, tomatoes, chia seeds, & parmesan cheese
  4. Drizzle with desired amount of Dijon Balsamic Dressing and toss
  5. Top with avocado & enjoy!
