Need some more flavor combos for that old standby avocado on toast?
I love coming up with new combinations of things to eat for lunch so I never get bored. Sometimes I just can't bear to have leftovers for lunch again. I need something fresh. And using up some of the veggies in my crisper doesn't hurt either.
Some notes: If you have it, spinach or arugula is awesome on here. And if you have time and you have access, toast the sourdough. You can even melt the cheese onto your bread by popping it into a toaster oven for a minute or so. —M.McAwesome

Ingredients
  • 1/2 Avocado
  • 3-4 small red radishes
  • 1 teaspoon whole grain mustard (mine is pretty mild, but a stronger one would be better to me)
  • 2 slices (~1 oz) medium sharp cheddar cheese
  • kosher or flaky salt
  • 2 slices sourdough bread
Directions
  1. Smear 1 side of 1 slice of bread with avocado and mustard. Mix them together, trust me.
  2. Top with slices of radish and sprinkle with salt. And put the cheese on top to keep the radishes on. Repeat from step 1 for the second slice of bread.
