Fresh Banana and Blueberry Muffins with Streusel Topping

More muffins! These are made with fresh bananas and blueberries and topped with streusel. They are organic and delicious and a good argument can be made for them being healthy to eat...in small quantities of course ;-)>

What You'll Need
Ingredients
  • The Muffins:
  • 3 ripe bananas
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1 egg @ room temperature
  • 1/3 cup walnut oil
  • 1 teaspoon baking soda
  • 1 tablespoon water
  • 2 cups flour
  • 8 ounces fresh blueberries
  • The Streusel Topping:
  • 1/4 cup white sugar
  • 1/4 cup brown sugar
  • 1 tablespoon cinnamon
  • 1 tablespoon cocoa
Directions
  1. Preheat oven to 350 degrees.
  2. Mash bananas in a blender. (I use the Ninja Blender)
  3. In a large bowl combine, bananas, sugar, cinnamon, allspice, nutmeg, salt, egg and oil until thoroughly mixed. Set aside.
  4. In a small bowl combine baking soda and water, mix and add to banana mixture.
  5. Add the flour and stir until thoroughly mixed. Then fold in the blueberries.
  6. Line muffin tins with liner paper and fill with batter to about ¼” from the top. (This batter is thick)
  7. Mix the streusel ingredients and sprinkle on top of muffins.
  8. Bake for 20 minutes.
