15 Minute Chickpeas Over Rice

Author Notes: Inspired by dying street food of Turkey. Chickpeas over rice is sold from -once ubiquitous- mobile food carts. However the original is done with white Jasmine rice, I prefer to do it with brown rice. Nice and cheap for a quick lunch. It is so classic to eat it with traditional Turkish yogurt drink-ayran.

Serves: 2
Prep time: 5 min
Cook time: 10 min


  • 1 cup Brown rice (microwavable/easy cook)
  • 1 tablespoon Olive oil
  • 1 Medium onion, chopped
  • 1 Can Chickpeas
  • 1 pinch Crushed red pepper


  1. Cook rice according to package instructions.
  2. Meanwhile, saute the onion with olive oil until thoroughly cooked. Add chickpeas and stir. Cook together for 2-3 minutes until chickpeas absorb the aroma of onions.
  3. In a bowl, put chickpeas at the bottom and the rice on top. Flip the bowl over onto a plate and sprinkle red pepper.
  4. Serve with ayran.

Thank you for letting me know. I had technical problems while publishing the recipe. Probably because of it. I added 1 can chickpeas.
