Inspired by dying street food of Turkey. Chickpeas over rice is sold from -once ubiquitous- mobile food carts. However the original is done with white Jasmine rice, I prefer to do it with brown rice. Nice and cheap for a quick lunch. It is so classic to eat it with traditional Turkish yogurt drink-ayran.

Ingredients

1 cup
Brown rice (microwavable/easy cook)

1 tablespoon
Olive oil

Medium onion, chopped

Can Chickpeas

1 pinch
Crushed red pepper
Directions

Cook rice according to package instructions.

Meanwhile, saute the onion with olive oil until thoroughly cooked. Add chickpeas and stir. Cook together for 2-3 minutes until chickpeas absorb the aroma of onions.

In a bowl, put chickpeas at the bottom and the rice on top. Flip the bowl over onto a plate and sprinkle red pepper.

Serve with ayran.
