Author Notes: Enjoy this simply fresh and delicious, dairy-free alternative to strawberries and cream. The coconut is so beautifully thick and creamy already, which makes for a light and easy to 'whip' up dessert. Pun intended. —Dee
Serves a crowd
- 1 can coconut milk (full fat)
- 2 tablespoons local honey
- 1/2 lemon, squeezed
- 1/2 teaspoon vanilla
- 1/2 pinch sea salt
- Remove just the thickened coconut cream and mix with honey, lemon, vanilla, and the tiniest bit of salt to taste.
- Mix well.
- Enjoy with fresh fruit
