rice noodles (What shape do you prefer? I prefer spindle)
paprika (one red, one yellow and one orange for making the food more colorful)
of medium ginger
corn oil for frying

Boil water with 1 tablespoon sea salt, add rice noodles, boil carefully 2 or 3 minutes, they are fast ready. Peel off shrimps, cut all vegetables, mango, apricots and mushrooms. Warm corn oil, add scallions, brown for a while, add shrimps and sea salt and ginger. Fry till the shrimps are ready, add paprikas, mango, dried apricots and oyster mushrooms and cook. When it is ready, add turmeric and coconut milk for seasoning. Whisk it together with rice noodles or not.
