- 2 cups cooked chicken breast
- 1/2 cup toasted, coarsely chopped walnuts
- 1/2 cup chopped celery
- 1/2 cup mayonnaise
- 1/4 cup chopped red onion
- 1/4 cup tarragon, chopped
- 2 tablespoons red wine vinegar
- Salt and Pepper to taste
- Mix all together, chill and eat on lettuce cups or croissants.
