Mexican Style Street Corn

Serves: 4


  • 4 husked corn on the cob
  • 4 tablespoons mayonnaise
  • 1 lime, squeezed
  • 1/4 cup cotija cheese or feta
  • 1/4 cup chopped cilantro
  • 1 teaspoon chile powder


  1. Grill corn on the cob until tender
  2. Remove from grill and spread 1 tbsp of mayo on each ear
  3. Sprinkle cheese, cilantro and chile powder over corn
  4. Squeeze lime over corn.
  5. Serve immediately
