Move aside romaine! For years I've had salads with romaine, tomato, and cucumber with italian dressing. Not very inventive and let me tell you, it gets old quickly. I've dabbled with different lettuces before and found that they were too bitter. However, when a sweet poppyseed dressing is added to a bed of bitter lettuce and topped with strawberries, there is a perfect balance between bitter, and sweet. I used watercress, arugula, and a little bit of radicchio to form the greens in my salad. Watercress isn't terribly bitter and is actually quite mild. Arugula is peppery, which adds a different layer of flavoring, and the radicchio brings the bitter punch to the salad. The poppyseed dressing, taken from Taste of Home, adds a subtle sweetness that coats the lettuce and tempers the bitterness. With strawberries, the dish becomes both satisfying and bright. —Dominick
