When my kids were in primary school, I was chairman of the annual school Book Fair...a thankless , endless Job. But I had ordered a lot of cook books, and during down time read and copied out recipes. This was one of them. The book and author are now unknown. I have since made my own additions and changes. Unlike Bland Turkey Burgers, these have a lot of taste and the smell while they are cooking is mouthwatering. Any bun of your choice is fine. My kids like to put wholegrain mustard on them. I like them with tomato jam, chutney, or cranberry sauce if i have it around. Sweet potato fries and a big salad are great accompaniments. —jamcook

Ingredients
  • 1 pound ground Turkey, preferably dark meat.
  • 1 cup fresh bread crumbs
  • 1 bunch scallions
  • 1 handful chopped parsley
  • 1 tablespoon chopped dill
  • 1 teaspoon dried oregano
  • 1 heaping tablespoon dijon Mustard
  • 2 teaspoons Worcestershire sauce
  • 1 lightly beaten egg
  • 1 teaspoon coarse salt
  • 1/4 teaspoon Black Pepper
Directions
  1. Put turkey in a large bowl
  2. chop scallions parsley dill, or any other herbs you care to use, in a food processor.
  3. Add crumbs and chopped and dry herbs to Turkey and combine well.
  4. Add mustard, worcestershire sauce, beaten egg, and salt and pepper to bowl and mix well .
  5. Form into 3 or 4 patties and pan fry in a preheated cast iron or heavy nonstick pan, 6 to 7 minutes a side. Remember that turkey has to cook thoroughly. These will develop a crunchy outside and delicious smell while cooking.
  6. Lightly toast some buns of your choice, and add any toppings you like
  7. l ike to serve these with roasted sweet potatoes or sweet potato fries and a big salad, but the choice is yours
