Overnight Oats with a Blueberry-Cashew Cream

Overnight Oats are one of my absolute favourite, simple breakfasts when I’m in a rush to get out the house. They take around 5 minutes to make the evening before, and then you can actually sit down and enjoy your breakfast the next morning knowing you don’t have to rush around to make a healthy, nutritious meal. As a dancer, training early mornings, this is a great breakfast to take on the go, you just need a glass jar and a lid - and your good to go! I also love this as a fuelling snack before a performance, as it’s full of sustaining complex carbohydrates which release slowly into the blood stream giving you a wealth of sustained energy. Oats also contain the alkaloid gramine, which is a natural sedative. This can help treat anxiety, depression and insomnia naturally without any side effects. Perfect for me pre performance, but this can also benefit anyone with excessive nerves or anxiety!

The blueberry cashew cream is just so delicious and gives it the perfect creaminess, which compliments the oats so well. Again this is packed with nutrition and bursting with antioxidants, fibre and plant protein. I love this combination, and I promise it is well worth the five minutes you’ll spend the night before. —Saskia Gregson-Williams

Ingredients
  • 1/2 mashed banana
  • 1/2 cup oats
  • 1/4 cup almond milk
  • 1 tablespoon flax seeds
  • 1/2 frozen banana
  • 1/2 cup blueberries
  • 1 medjool date
  • 2 tablespoons cashew nuts
  • 2-4 tablespoons water/dairy free milk
Directions
  1. For the oat mixture, mix 1/2 banana, oats, almond milk, chia seeds & flax seeds in a bowl. Make sure the banana is mashed before you add it!
  2. For the creamy topping add all other ingredients to your blender and simply blend until totally smooth. add the oats to the bottom of a jar, or glass and top with the cream. Leave in the fridge overnight and enjoy in the morning.

Easy breakfast but a little too sweet on top. I followed reviewers directions below and reduced the oats to 1/3 and almond milk to 2T. Next time will reduce the frozen banana by half. Recipe directions include chia seeds but ingredient list does not.

We're loving this recipe. Changed almond milk to 2T water for the cream.

I used 1/3 c. oats, added 1/4 tsp. cinnamon, and 1 serving collagen powder with oat mix. For cashew cream, I omitted the date and used 2T almond milk. DELICIOUS doesn’t even begin to describe it.
