Author Notes: This is a typical italian recipe from Tuscany, i like to add a bit of parmesan cheese, to enhance the salty taste, but it's optional, is simple, funny and tasty, you can fry or bake it. Enjoy it.Mario Marco Farinato

Serves: 2

  • 2 cups Chick pea flour
  • 4 tablespoons Parmesan cheese
  • 1 teaspoon Olive oil
  • 1 cup Water
  1. Place all ingredients in a bowl and mix with a whisk to obtain a smooth cream consistency, it is recommended to sift the chickpea flour. Add plenty of olive oil in a frying pan and fry the mixture until the outside is crispy, serve it .
  2. Serve with a salad of cucumbers and tomatoes and add fresh soft cheese(stracchino would be perfect) , in the absence of Stracchino you can use any cream cheese you like.
