Ingredients
  • 1 cup old-fashioned rolled oats
  • 1 cup plain flour
  • 1 cup thick buttermilk
  • 1/4 cup chopped green olives
  • 2 teaspoons freshly cracked black pepper
  • 1 egg
  • 2 teaspoons salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon soda bicarb
  • 3/4 cup mashed ripe avocados
Directions
  1. Soak the oats in the buttermilk for an hour.
  2. Grease and prepare 12 muffin moulds and preheat the oven to 200 degrees C.
  3. Sift the flour together with salt, baking powder and soda bicarb.
  4. In another bowl, beat the egg into the oat mixture followed by the avocados and the flour till just combined.
  5. Add the pepper and chopped olives, and bake for 15-20 minutes till an inserted toothpick comes out clean.

I would really like to try this recipe today, as I have a couple of avocados ready to use up. ncynomad is right about the fact that this is not a "fat free" recipe, although there's no added sugar....

You seem to have left the avocados out of the ingredient list. Also, not to split hairs but eggs, olives, buttermilk and avocados all contain fats so you can't really call this recipe "fat free".

The fat-free is too emphasize the absence of butter in the recipe but I guess you have a point. Will get rid of the 'fat-free'.

To be honest, I think it looks all the better without the "fat-free". The recipe looks quite appetizing all on its own!

This is an intriguing recipe, but avocados are not included in the list of ingredients. Can you please indicate the amount?
