Author Notes: You've gotta love a recipe that's easy and incorporates superfoods! This jam is delicious on whole grain toast or stirred into yogurt… or, right off the spoon…. —There's A Cook In My Kitchen
Makes 1 cup
- 1 quart fresh strawberries, hulled
- 1 tablespoon raw honey
- 2 tablespoons chia seeds
- 1 orange rind or tangerine rind (a.k.a.: chen pi) (even better, if it's been dried in the sun)
- Put the strawberries and honey in a medium saucepan over medium heat. Stir often until it comes to a boil. Stir in the chia seeds. Add the optional Chen Pi ( a chinese herb that is made by drying orange peel or tangerine peel in the sun) here. Lower the heat a little and simmer for 15 minutes, stirring occasionally.
- Turn off the heat and let the mixture cool for 15 minutes. Serve it warm on toast or let it cool completely and store it in a covered jar in the fridge.
