Strawberry Chia Jam

You've gotta love a recipe that's easy and incorporates superfoods! This jam is delicious on whole grain toast or stirred into yogurt… or, right off the spoon…. —There's A Cook In My Kitchen

Ingredients
  • 1 quart fresh strawberries, hulled
  • 1 tablespoon raw honey
  • 2 tablespoons chia seeds
  • 1 orange rind or tangerine rind (a.k.a.: chen pi) (even better, if it's been dried in the sun)
Directions
  1. Put the strawberries and honey in a medium saucepan over medium heat. Stir often until it comes to a boil. Stir in the chia seeds. Add the optional Chen Pi ( a chinese herb that is made by drying orange peel or tangerine peel in the sun) here. Lower the heat a little and simmer for 15 minutes, stirring occasionally.
  2. Turn off the heat and let the mixture cool for 15 minutes. Serve it warm on toast or let it cool completely and store it in a covered jar in the fridge.

I made this without the tangerine peel, but I love it! I also used agave syrup instead of honey. Sometimes I eat it on toast with nut butter, but sometimes I just eat a small bowl plain. Delicious!
