Ingredients

1 quart
fresh strawberries, hulled

1 tablespoon
raw honey

2 tablespoons
chia seeds

orange rind or tangerine rind (a.k.a.: chen pi) (even better, if it's been dried in the sun)
Directions

Put the strawberries and honey in a medium saucepan over medium heat. Stir often until it comes to a boil. Stir in the chia seeds. Add the optional Chen Pi ( a chinese herb that is made by drying orange peel or tangerine peel in the sun) here. Lower the heat a little and simmer for 15 minutes, stirring occasionally.

Turn off the heat and let the mixture cool for 15 minutes. Serve it warm on toast or let it cool completely and store it in a covered jar in the fridge.
