Made this for dinner last night and it blew me away. I was looking for that key to make me love beets (we get SO many in our CSA), and this was it. I mixed up the goat cheese rounds ahead of time and I must say - the garlic flavor REALLY bloomed in the fridge. I loved it, but it was definitely potent. Now I'm toying with the idea of serving the goat cheese mixture as a warm spread or maybe on top of some crostini... the flavors are amazing together. Thank you!

This looks wonderful - I'd like to make it right now but I have this enormous roasted chicken to eat first! Seriously, it will be the perfect choice for a lunch I'm serving next week. Many thanks and thumbs up.

Thanks Liz! I served this for a lunch about a month ago and it was very popular. And I understand about the roasted chicken. I'm making my second one tonight b/c I'm still tweaking the stuffing. I've been working on it for a couple weeks now. We'll have chickens coming out our ears tomorrow :-))

Such a great spin on the goat cheese salad. I will forever remember my first taste of Alice Water's fried goat cheese salad at Chez Panisse and I have a feeling I'm going to remember every bite of this make-over! Can't wait to try it..
