This is a very simple recipe with a great effect. The rice is very slightly sweetened by the apple juice and the apples. You can also use chicken stock instead of the water or the whole amount of liquid. I prefer to use 2 tbsp. or rum instead of the extract, and add it after it's cooked. I also like to add the apples a few minutes before the rice is cooked. Give it a try before you dismiss this unpretentious, but oh-so delicious dish! —Emilia Rosa

What You'll Need
Ingredients
  • 1/2 cup onions, chopped
  • 2 tablespoons butter
  • 2 cups apple juice
  • 1/3 cup water
  • 1/2 teaspoon salt
  • 1 cup rice, uncooked
  • 2 apples, medium, chopped
  • 1 cup celery, sliced
  • 1/2 cup walnuts, coarsely chopped
  • 1/2 teaspoon rum extract
Directions
  1. Sauté onion in butter. Add liquid and salt; bring to the boil. Add rice; cook 20 minutes. Add remaining ingredients and let sit 5 minutes before serving.
