Rub a mediun large pan in extra virgin olive oil and warm on medium heat. Pan fry your egg sunny side up and crispy around the edges seasoning with a small pinch of coarse salt and freshly ground pepper. Using the same pan toast the first side of your bread until brown. Flip and spread a thin layer of Dijon on one piece country bread and a layer of Gruyere cheese on the other piece. Once cheese is melted remove from heat and layer with argula, sliced avocado and fried egg.
