Avocado, Fried Egg and Gruyere on Country Bread

Serves: 1

  • 1 dash Extra Virgin Olive Oil
  • 1 pinch Coarse Salt and Fresh Ground Pepper
  • 1 large Egg
  • 2 pieces Country Bread
  • 1 drop Dijon Mustard
  • 2 pieces Guyere Cheese
  • 1 bunch Arugula
  • 1 ripe Avocado
  1. Rub a mediun large pan in extra virgin olive oil and warm on medium heat. Pan fry your egg sunny side up and crispy around the edges seasoning with a small pinch of coarse salt and freshly ground pepper. Using the same pan toast the first side of your bread until brown. Flip and spread a thin layer of Dijon on one piece country bread and a layer of Gruyere cheese on the other piece. Once cheese is melted remove from heat and layer with argula, sliced avocado and fried egg.
