Breakfast Salad


Author Notes: Healthy delicious salad for breakfast or brunch Sharebeauty

Serves: 2

Ingredients

  • 4 Eggs
  • I bunches Kale , spinach or lettuce of your choice
  • 1 Avocado
  • 6 ounces Turkey bacon cooked & crumbled
  • 1/2 Sliced cucumber
  • 2 ounces Crumbled feta or Goat cheese
  • handfuls Shredded carrot

Directions

  1. Simply toss all your vegetables together . You may add or subtract to your preference . Cook turkey bacon or sub shredded chicken or turkey leftovers .. Scramble eggs in non stick pan with just a coating of Olive oil brand of your choice . Be sure and season eggs . I love Trader Joes lemon pepper seasoning .
  2. Arrange scrambled eggs on salad portioning two plates . Top with sliced avocado, turkey & crumbled cheese . A squeeze of fresh lemon juice with 2 tablespoons olive oil is fine for dressing .
  3. The great thing about this salad us you can add or subtract to your liking . Fresh herbs, scallions etc . I like to add a dollop of siracha hot sauce !
