WONDERFULLY SIMPLE AND YET SOPHISTICATED —Mariana de Saint Phalle

Ingredients
  • 2 FILETS OF BEEF 3/4 - 1" THICK
  • 2 SLICES FRENCH BREAD SAUTEED IN BUTTER
  • 1 SHALLOT, CHOPPED
  • 1/4 cup WHITE WINE
  • 1 tablespoon EACH ANCHOVY PUREE AND BUTTER MIXED
  • 1/4 cup WHITE WINE
Directions
  1. QUICKLY SAUTE THE BREAD SLICES IN HOT BUTTER IN SKILLET AND REMOVE
  2. ADD THE FILETS TO THE SKILLET FOR 3 MINUTES ON EACH SIDE, REMOVE AND PLACE ON THE BREAD SLICES
  3. LOWER HEAT AND ADD CHOPPED SHALLOT AND ANCHOVY BUTTER MIX AND THEN ADD THE WINE SIMMER FOR 2-3 MINUTES- pOUR OVER FILETS
