Author Notes: Heirloom tomatoes are dressed in bright citrus flavours and their favourite herb, basil. This simple salad pairs just as perfectly with crostini as it does with grilled chicken or steak. —Adena Leigh
bunch fresh basil
tablespoon olive oil
Salt and pepper to taste
- Chop heirloom tomatoes into chunks. Add to medium-sized bowl.
- Remove leaves (about 20 – 30) from basil bunch, roll them up together and slice. Add to bowl.
- Add lemon juice, zest and olive oil. Toss to incorporate.
- Season with salt and pepper. Toss. Serve!
