A delicate thyme and tomato sauce which is perfect with pasta, or on pizza as well as a sauce for steamed veggies. Add a few fresh thyme leaves at the last moment to add the "shine" to this tomato sauce. —Annalisa @ Joy of Yum

Ingredients

medium onion, chopped

cloves of garlic, finely chopped

Splash of red wine (optional)

Several sprigs of fresh thyme

2 x 800 grams
organic canned tomatoes

1 teaspoon
honey

Salt and pepper

A few fresh thyme leaves for the final moment!
Directions

Heat a large frying pan and add the onions. Stir now and again to prevent burning but allow the onions to soften. Add the garlic and keep everything moving in the pan for a few minutes. Add leaves from the thyme sprigs and a splash of red wine.

Tip the tomatoes into the pan and bring to a gentle simmer for about 5 minutes. Mash and squash the tomatoes as best you can.

Allow to cool a little and then place in the goblet of a blender and whizz until smooth.

Pour the sauce back into a clean frying pan pan. Simmer until the tomato sauce has reduced to the desired consistency. Add honey and season with salt and pepper and a few fresh thyme leaves.

Store in glass jars in the fridge for a week or so. Alternatively you can pop it in the freezer
