Author Notes: I'm making a big statement here and going to tell you that this is the best tahini I've ever had. Welcome all cooks who think they can't cook, because in this dish, burning your food is a very, yes very, good thing. —Mikhayla
- 4 zucchinis
- 1 jar of tahini paste
- 1/2 lemon
- Roast zucchinis on broil until totally burnt. Yes, burnt.
- Once burnt, allow zucchinis to cool down. They’ll be really hot and filled with natural water. When cool, peel the burnt skin off with your fingers.
- In a vitamix, blender, or with your good ol’ wrist and a bowl, mix tahini paste and zucchinis.
- Add all other ingredients to taste. Be generous. This is a lot of tahini…
