CHOCOLATE CHIP & KABOCHA BREAKFAST BARS

What You'll Need
Ingredients
  • 4 eggs
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla
  • 1/2 teaspoon cinnamon
  • 1 1/3 cups roasted and mashed kabocha (or any other squash)
  • 1/4 cup almond meal
  • 1/2 cup dark chocolate chips
Directions
  1. Preheat oven to 370 degrees
  2. Place ALL the ingredients in a bowl, grab a whisk and get whisking!
  3. Then place the mix in a parchment lined 8x8 baking tray and place a few more chocolate chips on top
  4. And bake for 35-37 minutes
  5. Let cool completely before slicing into

I've been eyeing this recipe for a few weeks because I had a kabocha squash that I wanted to use and my kids love baked goods and chocolate and I was looking for a healthier alternative. These were SO Delicious! My family devoured them and my kids have been asking for more. We have a pretty unrestricted diet (i.e. we eat gluten and dairy, and everything) but these were so delicious and very easy to make. I followed your recipe exactly. It's hard to believe it has such simple and pretty wholesome ingredients. Thanks for posting!
