Cranberry cinnamon baked oatmeal topped with warm berries and honey

There is a just a variety of things you can do with oatmeal from breakfast, to lunch , snacks and more. My favorite ingredient to work with (besides eggs) for breakfast is oatmeal. Its just the perfect way to start any successful day :-) —Afrovitalityeats

Ingredients
  • 3/4 cup Quaker oats
  • 1 cup almond milk
  • 2/3 cup Dehydrated cranberries
  • 1 tablespoon Cinnamon
  • 2 tablespoons Brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup Fresh Berries medley
  • 1-2 tablespoons Honey
Directions
  1. Preheat Oven to 375
  2. Combine Oats, cinnamon, brown sugar, cranberries in a bowl and mix
  3. Add almond milk and vanilla and mix well
  4. Put in an oven safe bowl (Lightly greased to prevent sticking) and bake for 30-40 minutes
  5. Pull out of oven and flip on serving plate ( Let bowl cool to touch in order to prevent burn injury)
  6. Warm fresh berries medley in a sauce pan until a little juicy
  7. Top oatmeal with juicy fresh berries medley and drizzle with honey
  8. Serve warm. Feel free to add some eggnog or warm milk if you want but I wanted just a simple bounty of healthiness this morning!

This recipe is a perfect blend of simple and delicious! It seemed almost too easy - all the ingredients were already in my pantry! I put it in the oven with a bit of trepidation, not that I doubted it...but it seemed too soupy to possibly bake up correctly, but 35 minutes later it was perfectly done. I'm so delighted with this that I'm already dreaming up a few twists: cherry and cocoa, apricots and pumpkin pie spice...
