Salmon cheeks

Ingredients
  • 1 bag (1/2 pound) salmon cheeks
  • flour
  • sea salt and pepper
  • oil for frying
  • 1/4 cup Tamari or regular soy sauce
  • 1 tablespoon fish sauce
  • couple drops of hot sauce (optional)
Directions
  1. Wash salmon cheeks and pat it dry with paper towel.
  2. Season with salt and pepper.
  3. Dredge each piece in the flour.
  4. Fray in oil, 2 min on each side. Don't overcrowd frying pan.
  5. Serve warm with the sauce you made with Tamari, fish sauce and hot sauce.

I love salmon but have never seen salmon cheeks for sale. In fact, an online search only turned up halibut cheeks that you can order at a hefty price. I wonder if you can buy them frozen in the U.S. stores or only in Canada. When I traveled in Turkey, my friend who was from Turkey always made sure that I ate the cheeks from grilled snapper that we had. She said it was the best part of the fish. It was good. Who knew that fish cheeks were sold separately! Wish I could find some here.

I am not sure where to buy them in U.S.
I bay them in an Asian market cross a street from where I live. They don’t have them all the time but they are in the freezer section and they are pretty cheap.
