Homemade rustic potato tacos featuring sweet potatoes, red potatoes, spinach, roasted corn, peppers and onions on corn tortillas. Didn’t have much food left in my kitchen but I wound up throwing together this for lunch. Be creative, you’ll always come up with something!
Get some olive oil going in a frying pan. Throw in your chopped potatoes. Get them cooking down (since they take longer) then go ahead and add your roasted (canned) corn, and your peppers and onions. Let everything cook down. When everything is looking good, throw in your spinach (do that last cause it cooks super quickly) At this point get your corn tortillas heating up. To add some more flavor go ahead and add some sriracha, hot sauce, etc. Top them with some crumbled feta or whatever you want! Be creative here -- remember you are cooking with whatever have left!! I find it so gratifying to whip up something with what little you have left in your kitchen! Peace
