Homemade Tomato Salsa

Ingredients
  • 1/2 red onion, coarsely chopped
  • 1/2 cucumber, piled, seeded and coarsely chopped
  • 1/2 cup cilantro coarsely chopped
  • 1 jalapeno, sliced
  • 1 can(28 oz) diced tomatoes, drained
  • salt and pepper
  • 2 tablespoons olive oil
Directions
  1. Put onion and jalapeno in food processor and pulse 3-4 times.
  2. Add cucumber and cilantro, pulse a few times.
  3. Add drained diced tomatoes, salt, pepper and olive oil, pulse a few times.
  4. Serve with corn tortillas, pita chips or cucumber slices.
  5. If you can make the day before it is even better.
  6. It will hold 5-6 days in the fridge.
