Good old fashioned banana bread with a moist, tender crumb. You'd never, ever guess it was gluten free! —Camilla Maybee

What You'll Need
Ingredients
  • 2/3 cup brown rice flour
  • 3.5 tablespoons potato starch
  • 2 tablespoons tapioca starch
  • 1/3 cup light brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon xanthan gum or psyllium husk powder
  • 1 cup mashed bananas (about 2-3 medium)
  • 1 eggs
  • 1/4 cup melted butter
  • 1/4 cup applesauce
  • 1 teaspoon vanilla
Directions
  1. In a large mixing bowl, combine the flours, baking soda,guar gum, and cinnamon Set aside.
  2. Beat the eggs with the mashed banana, brown sugar, eggs, butter, applesauce, and vanilla until well blended.
  3. Slowly pour the wet mixture over the dry and stir until just combined.
  4. Pour batter into a parchment lined loaf pan.
  5. Bake at 350 degrees for 1 hour, or until a toothpick inserted in the center comes out clean.

Made it for a second time but subbed greek full fat yogurt for the applesauce and use coconut sugar. I added toasted unsweetened coconut flakes and macadamia nuts. Turned out great but again shorter baking time. 50 minutes and it was definitely done.
Tastes great but slightly crumbly. I don't mind as I like rice flour in this recipe, but perhaps the addition of a different flour in part might change this? It seemed moist enough when I mixed it.
Also, I use psyllium husk powder.

Made this recipe as directed using psyllium husk powder. I also swapped the potato starch for corn starch. Baked it for 58 minutes because I had an appointment. To my surprise it was done so I'm glad I did that or it might have been over baked.
Very satisfying and tasty.
I like the consistency of rice flour so I was happy to find this recipe. I will make it again but may change it up slightly to perhaps add some toasted nuts, or blueberries or maybe a cinnamon swirl down the middle.
I might also slightly decrease the bake time to perhaps 50-55 minutes.

There seems to be something wrong with this recipe. In the ingredient list it refers to xanthin gum or psyllium husk powder. However, in the directions it says to, combine the flours, baking soda, GUAR GUM, and Cinnamon. Guar gum isn't called for in the ingredient list. Are guar gum, xanthin gum and psyllium husk powder interchangeable? Also, it calls for "1 eggs" in the ingredient list. Shouldn't it be 1 egg? , In the directions it says to beat the eggs with the mashed bananas, brown sugar, eggs, butter, applesauce, and vanilla until well blended. How many eggs are called for???
