chipotle chili in adobo sauce, chopped

15 ounce cans low-sodium black beans, rinsed and drained

carrots, finely diced

low-sodium soy sauce
Directions

Heat oil in a large Dutch oven over medium-high heat. Add onion and bell pepper and sauté, stirring occasionally, until onions begin to brown, about 10 minutes. Add garlic and sauté 30 seconds. Add mushrooms and sauté until they begin to brown, about 4 minutes. Add crumbles, beer, tomato paste, chipotle chili, paprika, oregano and chili powder and bring mixture to a boil.

Add beans, carrots and soy sauce and bring to a boil. Cover, reduce heat to medium-low and simmer 40 minutes or until carrots are tender.
