Author Notes: When I do roast garlic, I by 1pound and roast all. It is very handy to have some on standby in the freezer.anka

Serves 4

  • 30-35 peeled cloves garlic
  • 1 tablespoon olive oil
  • 1 sprig fresh thyme
  • 4 cups chicken or vegetable stock
  • 2 slice of bread ( 4 ounce ) my was whole grain but any will do.
  • salt and black pepper to taste
  1. Wrap the garlic, 1 tbs oil and thyme in aluminum foil and roast in the oven for 40 minutes.After 30 minutes open foil so garlic can get some color.
  2. Bring stock to boil , add garlic and thyme and cook for 10 minutes.
  3. Add bread in and let sit for 5 minutes.
  4. Remove sprig and discard.
  5. Cool slightly and put in blender.
  6. Adjust seasoning, reheat and serve .
