White Bean Chocolate Chip and Peanut ButterĀ Bars

This recipe has become a favourite amongst my family and friends! It's a surprisingly delicious way to use beans in a dessert. —jessicamclement

Ingredients
  • 1 cup white beans
  • 1/4 cup apple sauce
  • 1/4 cup maple syrup
  • 1/2 cup peanut butter
  • 1 teaspoon baking powder
  • 2 grams agar agar powder
  • 1/2 teaspoon salt
  • 75 grams dark chocolate, chopped
Directions
  1. Preheat an oven to 180 degrees celsius (350F).
  2. Grease a 7 x 11 inch (18 x 28 centimetres, roughly) brownie pan and then line it with parchment paper. It doesn't hurt to grease the parchment paper, too.
  3. In a food processor, puree the white beans together with the apple sauce.
  4. Add the rest of the ingredients, except for the chocolate, to the food processor. Blend well.
  5. Pour the batter into a bowl and fold in the chocolate.
  6. Bake at 180 degrees for 18 to 20 minutes, or until slightly golden brown on the top.
  7. Allow the bars to cool before cutting.

Is it possible to omit the agar agar?

I've never tried this without the agar agar... it helps serve as a binding element (instead of using eggs), so if you omit it the bars may be more delicate. The taste shouldn't be affected, however. If you're not making a vegan version, you could try to use one egg in it's place.

I always use unsweetened ... But if you only have sweetened applesauce I'm sure it would work too!
