Serves 6

  • Root vegetables
  • Strong-flavoured virgin olive oil
  • pinches Chilis
  • Herbs for flavours you like
  1. Choose and roast any root vegetable you are happy with, put them in a metal big bowl with chillies and start mashing them, at the same time pouring strong virgin olive oil into the mixture till you get the paste consistency. Keep them in jars in the fridge.
