Ingredients
  • 1/2 cup roasted blue corn flour
  • 1 teaspoon Juniper ash
  • 2 cups cold water
Directions
  1. In a bowl mix the flour and ash together with a whisk until evenly distributed. Set aside.
  2. Place water in a pot making sure it does not exceed halfway. Add the flour mixture while the water is cold as to not create large lumps. Whisk together until smooth.
  3. Cook mixture on medium high, stirring constantly so the bottom of the pot doesn’t burn. Cook until thickened of desired consistency. *Add water to thin out. * To thicken, add a slurry of half water and flour (2 Tbsp cold water + 1 Tbsp flour).
  4. -If desired, sweeten with sugar and enjoy it while it is warm.

What kind of nutrients are in blue flour? Does it have any protein? My husband says yes and I say no. Please let me now what it is good for the body, besides tasting great!

Hi Melody, yes it does have protein about .7grams per 100grams of blue corn but it does have a lot of health benefits but like everything in life too much of a good things is always too much - https://www.healthbenefitstimes.com/blue-corn/

If you google "Shima of Navajoland" you'll find a miller in the Navajo Nation who sells small bags for only $5. Shipping added another $7 for me so not bad in total.
