Very Simple Roasted Beets

Author Notes: This is a very simple way to roast beets. I serve them often on their own as a side dish or tossed with a little Bulgarian feta and fresh thymecoffeefoodwrite

Serves: 2-4

  • 3-4 fresh beets (one bunch) - stems removed and cut into 1 inch cubes
  • extra virgin olive oil
  • sea salt
  • fresh ground pepper
  1. Place beets on large cookie sheet. Drizzle with enough olive oil to cover; sprinkle with salt and pepper, toss to coat completely and roast in a 425 degree oven for about 30 minutes or until fork-tender -- tossing once during cooking. Serve.
