This is a very simple way to roast beets. I serve them often on their own as a side dish or tossed with a little Bulgarian feta and fresh thyme —coffeefoodwrite
Ingredients

3-4 fresh beets (one bunch) - stems removed and cut into 1 inch cubes

extra virgin olive oil

sea salt

fresh ground pepper
Directions

Place beets on large cookie sheet. Drizzle with enough olive oil to cover; sprinkle with salt and pepper, toss to coat completely and roast in a 425 degree oven for about 30 minutes or until fork-tender -- tossing once during cooking. Serve.
