Three Cheese Noodles and Spicy Vegetable Comfort Food

This recipe is so versatile. Use any of your favorite noodles in the pantry. The veggies and spices are flavorful, and readily available. Combining three cheeses with the spicy flavoring makes for an easy and delicious comfort food for you and your family or guests. —Christine Kallianidis

Ingredients
  • spagetti, broccoli florets, julienned carrots, julienned red peppers, garlic sweet onion
  • 1 pound spaghetti
  • 2 cups broccolli florets1
  • 1 cup julienned carrots
  • 1 cup julienned red peppers
  • 3 cloves garlic
  • 1/4 cup sweet onion
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon minced dried onions
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • cubed mozzarella cheese, cubed asiago cheese, parmesan cheese
  • 1 cup Mozzarella cheese
  • 1 cup Asiago cheese
  • 1/2 cup Parmesan cheese
Directions
  1. spagetti, broccoli florets, julienned carrots, julienned red peppers, garlic sweet onion
  2. Cook 1 lb Thin spaghetti or other noodles, drain and set aside
  3. Steam broccoli, carrots and red pepper, set aside
  4. Combine all spices in a dish, set aside
  5. Saute onion and garlic with extra virgin olive oil
  6. Add steamed broccoli, carrots and red pepper
  7. Add combined spices, and saute until heated through
  8. Place spaghetti on each of 4 plates
  1. cubed mozzarella cheese, cubed asiago cheese, parmesan cheese
  2. Add cubes of Mozzarella and Asiago cheeses
  3. Add vegetable mix on top of cheeses, the heat of the vegetables will slightly melt the cheeses
  4. Add grated Parmesan cheese on top
  5. Serve immediately Serves 4-6
