Crepes with honey and walnuts

small apple, grated
coconut oil for frying pan
Filling

ground walnuts

teaspoon
cinnamon

lemon, zest and juice

honey plus for drizzling
Directions
Crepes
Put everything except apple into the blender and blend for 20-30 second or until no lumps remain.
Add grated apples and blend quickly into the batter just to mix.
Pour 1/3 cup batter into the centre of the hot oiled pan.
Lift pan from the stove quickly tilts pan so that batter thinly covers the bottom, return pan to stove and cook about 30 sec on each side.
Transfer crepe to a plate, cover to keep warm. Repeat.
Filling
Mix ground walnuts, cinnamon and lemon zest.
Separately mix 1/3 cup honey and 2 tbs lemon juice.
Sprinkle 2 tbs walnuts mix on the half crepe, drizzle 1-2 tsp honey lemon mix all over.
Roll or fold in half and then fold in half again.
Sprinkle with cinnamon and drizzle with honey.
