Goat Cheese and Herb Mashed Potatoes

Serves 4-5

  • 1 pound Russet Potatoes
  • 2 tablespoons Rosemary
  • 2 tablespoons Thyme
  • 4 tablespoons Goat Cheese
  • 1-2 cups Whole Milk
  • 2 tablespoons Butter
  • Salt and Pepper
  1. Peel and quarter potatoes
  2. Boil potatoes, rosemary, and thyme
  3. Drain potatoes and herbs
  4. Mash potatoes and add goat cheese, warm milk, and butter. You may need more or less milk to get the texture you want
  5. Salt and pepper to taste
