Who doesn't love food trucks? Here in LA they are a way of life. They have their own Facebook pages and blogs and even have their own day of the month in Venice Beach! Well my own personal favorite was called Fresh Fries, an entire menu dedicated only to avant grade Fries. Unfortunately the truck is no longer and I have had to fend for myself in trying to recreate this most unusual late-night, ultra-indulgent food masterpiece, although to look at it you would think it more of a massacre. All I can tell you is that you have to taste it to believe it. It is the perfect balance of salt, sweet, creamy, sour mouth-watering goodness you will ever stumble upon after a 10 mile bike ride and a 5 mile hike. You have been warned :) —nycnomad

Ingredients

Medium to Large Sweet Potatoes

1/10-1/4 pounds
Semi-firm Goat Cheese

1/4 cup
Raspberry Jam

2 tablespoons
Olive oil

1 pinch
Chili Powder *Optional but excellent

Salt to taste
Directions

preheat your oven to 400F.

Cut the sweet potatoes into even sized strips. I cut them by hand and prefer not to peel them as it gives some of the fries an extra crispy edge.

Place the strips in a bowl and drizzle with olive oil. Sprinkle salt over the sweet potato strips and toss until lightly coated.

Line a cookie sheet with parchment or aluminum foil. Pour out the fries onto the sheet and spread evenly over the cookie sheet.

Bake in the oven for 30mins. Remove cookie sheet from the oven and mvd/flip the fries using a sharp spatula, some may stick a bit depending on how thick the fries are cut. For thinner fries, they may only take 15-20mins at this temperature.

Place the fries back in the oven and bake for an additional 15-20 mins depending on thickness. Remove when they have crispy brown edges and are browning on the bottoms.

While the fries are baking, place the raspberry jam in a small sauce pot and heat over a low flame until it begins to liquify. Do not melt it completely, it should still be partially gelled. Add the chili powder at this point if desired and stir it into the sauce. The chili flavor should not be readily perceivable, but just enough to give the raspberry sauce a "kick". Turn off the flame and allow the sauce to cool a bit.

When the fries are ready, plate them and crumble the goat cheese over the fries. It will soften with the heat of the fries and even melt a little.

Spoon the desired amount of raspberry sauce over the fries. If it looks strange then you have done it perfectly!
