Bacon & Blue Cheese Sweet Potatoes

A gourmet side dish made with sliced, seasoned sweet potatoes, and sprinkled with a tasty topping of bacon, blue cheese, and pecans. —Dash of Amy

Ingredients
  • 5 small sweet potatoes, cut in slices (peeling skins optional)
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 1/2 teaspoons Weber roasted garlic & herb seasoning
  • 4 slices turkey bacon, cooked and chopped
  • 1/3 cup crumbled blue cheese
  • 1/3 cup pecans
  • 1 tablespoon balsamic glaze
  • 1-3 teaspoons balsamic glaze over the top
Directions
  1. Spray a baking sheet (11x17) with cooking spray and line up the sweet potatoes in a single layer.
  2. Drizzle olive oil over the top evenly, and sprinkle with salt, pepper, and roasted garlic and herb.
  3. Bake at 400* for 15 minutes.
  4. Flip the potatoes over, and bake another 15 minutes.
  5. While the potatoes are baking, prepare the topping.
  6. Place chopped bacon, pecans, blue cheese, and 1 tbsp of balsamic glaze in a medium mixing bowl.
  7. Place the cooked sweet potatoes on a serving dish and scoop the bacon topping over the top evenly.
  8. Drizzle with 1-3 tsp of balsamic glaze, and serve.
