Taleggio, Leek and Thyme Toast

Ingredients
  • 3-4 small leeks, chopped into 2cm rounds
  • 1 tablespoon olive oil
  • 4 large slices of bread
  • 75 grams taleggio
  • A few sprigs of thyme
Directions
  1. In a large pan, heat the olive oil over a medium heat.
  2. Add the leeks, cover with a lid and sweat for 20 minutes, stirring occasionally, until soft and sweet.
  3. Season well with salt and freshly ground black pepper.
  4. Rub the bread with some olive oil, and toast under a grill until golden on both sides.
  5. Add the leek and dot with little cubes of taleggio.
  6. Grill until the cheese is melty, 1-2 minutes.
  7. Top with thyme leaves and serve.
